We have a new coffee available which we are very excited about. We received a 1/3 size shipment of this coffee in pouches that were vacuum sealed at the farm rather than the normal burlap sacks.  Brazil’s Daterra Farms fill the role of both farm and exporter leaving no part of handling the coffee out of their capable hands. This is good because Daterra uses processing and shipping techniques that are arguably the best in the world. You can immediately smell the freshness of the raw coffee when you open the pouch and the roasted and brewed coffee carries those same fresh aromas and flavors that the first scent indicated.

Honduras

We have a new coffee in! Honduras Marcala form the COMSA Coop. We’ve played around with a few roast profiles but we finally ended up sticking with  a medium roast, about 430F. This particular Honduran developed a clear black tea base with walnut and white grape overtones. The body is medium-full and produces a lingering sweet aftertaste. This coffee is definitely worth a try if you drink any of our medium roasted coffees or loved the other Honduran coffees we’ve had in the past.

Steeping Instructions:

Making Chai is Easy! Pour half cup of boiling water over 1 tsp of Chai; let steep 5 mins, then add half cup of hot milk or condense milk for greater sweetness. Strain leaves & spices before drinking. OR simmer 1 tsp of Chai with 1/2 cup milk & honey on stovetop. Gradually add 1/2 cup water. Strain leaves & spices before drinking.

Bergamot (Organic), Indian Black Tea (Organic)

Steeping Instructions:

1. Fill kettle with fresh water, then heat.

2. Warm your teapot with a little hot water, discard, place your tea leaves in teapot (one level teaspoon per cup), allowing heat of the pot to release bouquet of the tea leaves.

3. Heat water to rolling boil (212°). Steep up to 5 minutes.

*Vary time according to taste, & remember that steeping tea leave beyond 5 mins does not contribute to flavor, only bitterness.

2. Heat water below boiling (approx 175 – 185°). Steep 2-3 teaspoons up to 1 minute for first steep, 3-5 minutes for the subsequent steeps, refresh cup as desired.
